A bright yellow straw colour with a bouquet of melon, Bartlett pear, yellow apple, and golden kiwi. This dry, medium to full-bodied Pinot Gris has a smooth, slightly rich mouthfeel, great texture, and flavours of melon, tree fruits, and spice. Notes of spice, melon, apple, and citrus linger on the finish.

WINE MAKING
Pinot Gris was hand-picked September 23 from our estate vineyard. The grapes were whole bunch pressed, 100% of the juice was fermented and aged in neutral French oak barrels in multiple batches using different yeasts, that would allow for more options when it came time to blend the wine. The wine was aged in barrel for 6 months prior to blending.
FLAVOUR PROFILE
A bright yellow straw colour with a bouquet of melon, Bartlett pear, yellow apple, and golden kiwi. This dry, medium to full-bodied Pinot Gris has a smooth, slightly rich mouthfeel, great texture, and flavours of melon, tree fruits, and spice. Notes of spice, melon, apple, and citrus linger on the finish.
SERVING SUGGESTIONS
Serve lightly chilled at 14 to 15˚C. Serve with creamy lentil soup; poached salmon; roast chicken; pan fried scallops; grilled pork chops; smoked salmon quiche; pasta in a light cream sauce; black bean, cream cheese and quinoa dip; hummus with pita chips; semi-soft cheeses such as Wildwood from Stonetown Cheese in St. Marys Ontario. This wine will continue to develop through 2023.
